This tomato "sauce" makes a great light pasta - and also serves as a great filling for omelets!
- 1 - pint of cherry/grape tomatoes, sliced in half
- 1/2 - package of fresh mushrooms, sliced
- 1/2 cup of - frozen spinach (or a cup of fresh)
- Add garlic, Italian seasoning or just salt and pepper!
