Oh Menu Plan Monday. I'm not sure about you all but I have not felt like cooking lately! All the holiday craziness has really gotten the best of me.... so I'm saving all of my energy to cook up some of holiday favorites over Christmas Eve/Christmas!

A friend from work also just told me about a potato casserole she makes with red potatoes, bacon, sour cream, mayo & cheddar cheese. I'm still looking for the exact recipe... has anyone ever made one like this?
