Baked Potato Casserole

I made this dish over the weekend and it was so delicious and so easy!

  • 5lb bag of red potatoes, (scrubbed & quartered)
  • 16oz of cheddar cheese
  • 1 cup of sour cream
  • 8oz of cream cheese (cut into chunks)
  • 1lb of bacon, (cooked and crumbled)
Boil potatoes until tender (about 30 minutes). In a 9x13 oz tray combine potatoes with sour cream, cream cheese, bacon pieces and most of the cheese. Top with remaining shredded cheese and bake uncovered on 375 for about 30 minutes, or until heated through and cheese is melted. Enjoy!
