
Happy Menu Plan Monday! I did really well with last week's Rotisserie Style chicken! I ended up diverting from my menu plan (sadly, this happens a lot) and ended up getting 4 different meals out of the one chicken! The first night, we had the chicken with vegetables and mashed potatoes, the second night I shredded the chicken and made chicken salad sandwiches, the third night we ate it shredded over nachos (with beans, salsa etc,) and the last night I made this tuscan macaroni and cheese (but with chicken swapped out for the sausage). Not bad eh?
Monday: Grilled cheese and tomato soup (from a can)... Still not feeling so hot.
Tuesday: Pancakes with fruit and toast
Wednesday: Spaghetti with Ricotta, Lemon & Spinach (didn't get to it last week)
Thursday: Salsa Chicken made into taco salad
Friday: White Bean Chicken Chili (made with leftover's from Thursday) with cornbread
