Menu Plan Monday (4/20-4/25!)


I'm having a hard time coming up with ideas for meals this week/next week. Do you have any suggestions for me? (Chicken/vegetarian please!)

Monday: Chicken Parm Grinders, Salad

Tuesday: Basil Chicken and Pasta with vegetables

Wednesday: Breakfast for dinner! (TBD)

Thursday: May attempt General Tso's Chicken for DH! (Have you ever made this before?)

Friday: Pizza Night!

Saturday: Turkey Burgers, chips and homemade guac! (When I say homemade, I mean I'm mixing a seasoning packet and smushing avocados. ;) Have a better recipe? Please LMK!

save your $$ on the guac seasoning packets, for a yumm-o guac, i mash up an avocado, a little lemon juice and a little salt and pepper (really that's all you need) and if you want to stretch it a little bit farther, add some sour cream.

We use a similar General Tso's recipe. That should get you exactly what you're looking for. Enjoy!

The chicken grinders sound amazing.

As for the guacamole, since you already have the avocados, scrap the mix. Get some fresh salsa (either homemade or from the refrigerator case) that you really like, mush that in with the avocados, add some lime juice and salt and you are set. Fresher and tastier.
