Frugal Recipe: Rotisserie Style Crockpot Chicken


I love cooking a whole chicken in the crockpot. It's fool proof and seriously tender! This is my favorite recipe (Another fabulous crockpot 365 test drive!) :

Ingredients:
  • 1 whole chicken (mine was about 6lbs, but smaller is fine too!)
  • 2 tsp kosher salt (if you'd like it as salty as the ones in the store, add another 1 tsp.)
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 1 tsp Italian seasoning
  • 1/2 tsp cayenne pepper
  • 1/2 tsp black pepper
  • 4 or 5 whole garlic cloves
Directions
Rinse the chicken and remove bag from inside. I skinned the chicken, but this is optional. (If my former vegetarian self could see me now!) In a bowl, combine all of dried spices. Rub the spice mixture all over the bird, inside and out. Plop the bird breast-side down into the crockpot. Place the garlic in side the bird. Do not add water!

Cover and cook on high for 4-5 hours, or on low for 8. The meat is done when it is fully cooked and has reached desired tenderness. The longer you cook it, the more tender the meat. Devour!

Looks great! I myself am afraid of raw meat! DH is in charge of the chicken cooking around here :) Maybe one day I'll get over that!

Tried this last night while i slept... woke up this morning and it was falling off the bones!! it was sooo good, i brought some for lunch and had to taste some while i was putting it away.. i love my new crockpot and have been looking for recipes! Thanks Lindsay!!!

Looks wonderful! Did you put any aluminum foil at the bottom of the crockpot?? I've made meatloafs in the crockpot, and recipes have you put a scrunched up bal of foil at the bottom to "catch" any drippings from the meat. Was wondering if there would be the same issue with the chicken!

amweeks, I've never done that! Maybe I will try next time. I do cut most of the skin off - but the chicken does end up in a bath of juice...
