I was able to use that one chicken for 5 meals! (With a little left over!)
- First meal: Rotisserie Chicken with vegetables & mashed potatoes (3 servings)
- Second meal: Chicken sandwiches with ranch dressing (remember my quest on how to use up salad dressing?)
- Third meal: Chicken salad sandwiches (Chicken finely chopped or food processed with celery, a little mayo and salad dressing)
- Fourth meal: Homemade chicken pot pie
- Fifth meal: Grilled Burritos Frugal Jen's recipe!

I love to use leftover chicken mixed with rice and in a tortilla for a low-fat taco, or stirred into a pasta dish (think fettucini alfredo with chicken). And don't forget soup!
I used leftover shredded chicken in BBQ chicken sandwiches, chicken tacos, chicken enchiladas, and chicken and rice burritos.
I had gotten bone-in breasts for 89 cents a pound, bought about 20 lbs and put them all in the crockpot and shredded the chicken off the bone.

Chicken and stuffing casserole is great:
1-2 cups chicken, cooked
1 can cream of... soup
1 cup sour cream
1 package stuffing mix
1 bag frozen brocolli, optional
Make the suffing according to box. Spread in a 9x13 pan. Mix the rest of the ingredients in a large bowl. Spread over the top of the stuffing. Bake at 350 for about 30 minutes.
I use leftover chicken to make chicken quesadillas (you know how much I love my quesadilla maker!) and if there is enough I make chicken and rice casserole.

Oh this is so awesome, so many great ideas on here! Our household favorite is topping leftover shredded chicken on baked sweet potatoes with salsa and black beans! So delicious!!!
