Frugal Recipe Test Drive- Lemon & Herb Chicken


I finally cured my fear of cooking a whole chicken!!! And boy was it easy! (and delish!) :)

Ingredients:
  • one whole chicken (mine was about 5lbs and fit nicely in my 6 quart crockpot)
  • head of garlic
  • 2 lemons
  • salt and pepper
  • a bunch of fresh rosemary (or 2-3 tablespoons of dried rosemary)
Directions:
Spray the inside of your crockpot with cooking spray (much easier clean up!). Wash the chicke, remove the gibblets (frightening matter) from inside the chicken and rub it inside and out with a bunch of salt and pepper. Plop it into the crockpot. Peel your garlic and shove a bunch of the whole cloves into the bird cavity and throw some more on top and around the chicken. Slice the lemon and put slices on top, around, and inside the bird. Wash the rosemary and do the same.

Do not add water. Cook on low for 8-10 hours.

*I thought this was very good chicken. It was moist flavorful (very lemony). I give it an 8/10! :)
