Frugal Recipe: Baked Potato Soup !




* 1 small chopped onion(s)
* 1 1/4 cups milk
* 3 cups potato(es)
* 2 cups Chopped Broccoli (a little less than a bag of Green Giant Steamers)
* 1/4 cup Flour
* 8 oz. Shredded Sharp Cheddar Cheese
* 2 cans (about 32 oz) Chicken Broth
*bacon bits and green onions (optional) - for topping


Preparation

1. Peel and chop potatoes.

2. Whisk together flour and 1/3 cup chicken broth until smooth, set aside.

3. Combine remaining chicken broth, potatoes, broccoli, and onion in a dutch oven. Bring to a boil; cover, reduce heat, and simmer 8 minutes or until potatoes are tender. Gradually stir in flour mixture. Cook, stirring often, for 5 minutes. Handpick out every last onion for your husband, because you love him that much. ;)

4. Stir in milk and shredded cheese. Cook mixture over medium-low heat, stirring constantly, until cheese melts.

5. If desired, top each serving of soup with 1 teaspoon shredded cheese, 1 teaspoon bacon pieces, and 1 teaspoon chopped green onions.


This was a great recipe - easy and delicious! We gave it an 8.5/10 and ate with ritz crackers! :)

I made this soup tonight for dinner. It was very good. I had some homemade chicken stock from last week so instead of the canned broth I used my broth. I had some Sargento blended mild and sharp cheddar cheese so I used that. I had more broth than the recipe called for and I didn't feel like measuring it out so my soup was a little watery, but still very good. I made grilled ham and cheese sandwiches to go with the soup.

BTW- I diced my onions very fine. I wouldn't have had to pick them out for my hubby, but I would have for me. I'm the one that doesn't like onions. Since they were diced so small I didn't even know they were there.

You can use any kind of flour. I used regular as well. :)

LOL, we are having Baked potato soup this week too, but I never thought to add broccoli to it...I have to try that out :)
