Frugal Recipe - Pineapple Chicken


Found this recipe on Crockpot 365:

Ingredients:
--your choice of chicken (I used 6 drumsticks)
--20 oz can of pineapple chunks
--1/4 cup soy sauce
--1 t red pepper flakes

The Directions.

Plop the chicken into the crockpot. Add the pineapple (juice too), the soy sauce and the red pepper flakes. Cook on low for 4-6 hours, or on high for 3-4. The cooking time will depend on how thick your pieces of chicken are, and if they are frozen or not. Serve over rice or on a bed of fresh spinach.

This was very easy! We rated this chicken 7/10. It was tender but not very flavorful. If I did it again I'd probably double the pineapple and add more red pepper flakes.

sounds good... but i think i would have added the pineapple juice too into the crockpot.. woulda keep the meat juicier i think! =) gunna have to try it. yummm

Hi Jen,
I actually did add the pineapple juice from the can (the crockpot lady said just to add the chunks.) I'm not sure why it didn't turn out right... hmmm. Goodluck with yours!!! :)
